The eggs look beautiful, and you are the only other person on Earth that I've ever heard mention the coffee ratio conundrum. You can't "top off" a coffe-cream-sweetener combo! Why don't people already know that?
Then again, there are people out there that don't know what "coffee regular" means, so I guess I shouldn't be that surprised.

Just learn to drink coffee black, like an adult. (at least that's the world I grew up in) It really endears me to my fireman boyfriend when I tease him about his sugar cream with a little coffee crap he drinks.
