Elsa and Zayrina are so right. Risotto cakes are awesome.
I even guessed at the right amount of rissoto per egg (2 cups).
Perfect use for yesterdays risotto.
And here it is with scallops. This far outshone anything else I made. Thank you!

OH NO now I want risotto cakes SO MUCH. But I have no leftover risotto. I might have to make (and eat some) risotto tonight just so we can have risotto cakes tomorrow.

Elsa - they had risotto balls last night at a tasting event we went to and they covered them with marinara sauce. AWFUL.
