Love potato leek soup. Actually, I like leeks in anything. I use Swanson's Chicken Stock for soups, etc.--a little more expensive than the broth, but much more flavorful.

Arlene - I did not know that! Thank you. I was trying to find Campbells chicken double broth / double strength but I couldn't.

I use Kitchen Basics stock, or the Emeril stock if it goes on sale lower than the Kitchen Basics. I always get the lowest sodium stuff that I can find.
Sometimes I make my own, but not that often. I have to have enough bones.
